The Private Dining Experience @ Excalibur
A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace
the practiced hand and telling glance of a watchful cook. For that reason, this is also an account of what happens
when I make this dish, so you’ll understand each step. Of course, when you cook it once, it becomes yours, so
personalize it a bit. Add more of an ingredient you like or less of something you don’t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!
When you experiment with recipes you will introduce your family and friends to new flavours and turn ordinary recipes
into extra special recipes with your superior touch.
Setting a table with flowers and candles for the sole purpose of gathering together allows us to reflect on everything that
is beautiful about life. We talk about our dreams, our fears, we take pause, and give thanks for what we have.
But how often – in the tumultuous tempo of modern-day life – do we really allow ourselves the time to dine? To celebrate the butchers, the bakers, the candlestick makers, the botanists, the horticulturists, the harvesters, the
winemakers, cheese makers, farmers and growers, who have made it their life`s work to give us these magic moments.
“I invite you to go on this journey with me, dining to honour the life of food, because everything should lead back to the
table.” – Johann Ludick, Executive Chef @ Excalibur
